Jam and Coconut Slice

To die for…

Hello Everyone,

This slice is great for lunches and is super simple to make yet still super tasty. This crumbly slice may be a bit messy, but it makes up for it in taste! This slice always seems to be the first to disappear so if your family is anything like mine you should get in quick while there is sill a piece left.

Base:

Utensils:

  • Food processor
  • Measuring cups
  • Spatula
  • 20 x 30 cm slice tray
  • Baking paper
  • Round cup

Ingredients:

  • 2 cups plain flour
  • ½  cup caster sugar
  • 125g butter, chilled
  • 1 tsp vanilla essence
  • 1 egg

Method:

  1. Preheat oven to 180 degrees Celsius and line slice tray.
  2. Process flour, sugar and butter to resemble breadcrumbs. Add egg and vanilla. Process to form dough.
  3. Press dough into base of prepared pan
  4. Bake for 15-20 mins or until light golden.

Tip:

Using a round cup to flatten the base, this will help to make it spread evenly.

Topping:

Utensils:

  • Small bowl
  • Spoon
  • Whisk

Ingredients:

  • ¾ cup Jam
  • 2 eggs
  • 2 cups coconut
  • ½ cup caster sugar

Method:

  1. Spread jam over warm base.
  2.  Crack eggs in small bowl and whisk.
  3. Add sugar and coconut to whisked egg and stir until combined.
  4. Sprinkle coconut mixture over the slice.
  5. Put in oven and bake for 25 mins.
