Jelly Slice

It just melts in your mouth.

This is one of my absolute favourite slices of all time! It is absolutely delicious.

Base:

Utensils:

  • Food processor
  • Spatula
  • Scales
  • Baking paper
  • 20 x 30 slice tray

Ingredients:

  •  250g Marie biscuits
  • 175g Unsalted butter
  • Pinch Ground Cinnamon

Method:

  1. Line the slice tray making sure the paper hangs about 2cm over the edge.
  2. Process the biscuits until they form fine crumbs. Add butter and cinnamon before processing again.
  3. Press biscuit mixture into the slice tray into the base of the prepared tray.
  4. Chill for 30 minutes or until firm.
This is what the base of your slice should look like after it has been refrigerated.

Middle Layer:

Utensils:

  • Glass jug
  • Fork
  • Spatula
  • Medium bowl

Ingredients:

  • 395g Sweetened Condensed Milk
  • ½ lemon juice
  • ¾ cup boiling water
  • 2 teaspoons gelatine powder

Method:

  1. Combine condensed milk and lemon juice in a medium sized bowl
  2. Combine boiling water and gelatine in a small jug. Stir until completely dissolved, then stir into the condensed milk mixture.
  3. Pour over biscuit base and return to refrigerator for a further hour.
This is what your slice should look like after the center layer has set.

Top Layer:

Utensils:

  • Glass jug
  • Fork

Ingredients:

  • 85g raspberry or strawberry jelly
  • 250g boiling water
  • 200g cold water

Method:

  1. Dissolve jelly crystals in the glass jug. Adding cold water once the crystals are dissolved completely.
  2. Pour jelly mixture over base and chill for a further 3 hours or until jelly is set.
  3. Carefully remove slice from pan and slice to serve.  
This is what your completed slice should look like.

Tips:

  1. A fork is great for dissolving jelly crystals/ gelatin quickly
  2. By using refrigerated water the jelly will set quicker
