Pumpkin Coconut Pasta- Vegan Friendly

This combo isn’t super well-known, but once you try it you’ll know what I’m talking about. This Pumpkin and Coconut Pasta is delicious and believe me when I say the pumpkin just makes the dish, if you’d like a pasta that tastes like the ones in the cafes, then here it is. What’s great for you guys, is that its also vegan friendly!

Cooking Utensils

  • 2 saucepans
  • Wooden spoon
  • Potato masher
  • 1 small frying pan
  • 4 bowls

Ingredients

  • Half a saucepan of water
  • 2 cups of pasta
  • 1 can of Ayam’s Coconut Cream (400mL)
  • 1/4 cup of cream (optional, not for the vegan variation)
  • 1 quarter of a pumpkin
  • 2 tbsps of ground tumeric
  • 2 tsps of ground cumin seeds
  • 3 tsps of Mixed Herbs (Masterfoods)
  • 1/2 tsp of Himalayan salt

Method

  1. Fill one of your saucepans halfway to the brim with water.
  2. Slice up your pumpkin into small squares, and then put it into your saucepan, let it cook at low heat.
  3. While the pumpkin cooks, combine your normal cream (optional) and coconut cream in your other saucepan on medium heat, stirring with a wooden spoon until it becomes a little warm.
  4. Once the cream mixture is warm, put it on low heat.
  5. Add in the herbs and spices and mix with wooden spoon until smooth (if the mixture is correct it should turn a light green colour).
  6. Remove the pumpkin from the water, (DO NOT tip out the water in the saucepan) and place it into the sauce that you have created. (PLEASE NOTE: If the pumpkin is not soft, then leave it for a little longer before proceeding with the following steps)
  7. Put your pasta in the pumpkin’s water saucepan to cook.
  8. Using your potato masher, mash the pumpkin until it blends in with your sauce (depending on how well you have mashed, it may have stringy bits, this means you should continue to mash).
  9. Continually stir the sauce (so it doesn’t separate and burn) until your pasta is ready.
  10. Serve the pasta into bowls and top with pumpkin coconut sauce.
