Utensils:
- Pie Tin
- Canola Spray
- Spatula
- Food processor
- Electric Beaters
- 2x Small bowl
- Cup measures
Ingredients:
- 3 egg whites
- 120g pkt pecans
- 1 tsp vanilla
- 30 Jatz biscuits
- ¾ cup caster sugar
- 300 mL thickened cream
- 1 tsp vanilla essence, extra
- 1 tblsp. icing sugar
Method:
- Preheat oven to 180 degrees Celsius and spray pie tin.
- Place Jatz and 1 cup of pecans into the food processor and blend until broken up completely.
- Using and electric beater whisk egg whites in one of the small bowls until stiff peaks are formed. Gradually add in sugar until the mixture becomes thick and glossy. (You may not need the full ¾ cup)
- Combine the biscuit and pecan mixture and the vanilla essence to the egg. Add in about half of your remaining pecans and mix thoroughly.
- Place mixture into the pie tin and cook for approximately 25 mins or until set hard.
- Whip cream, icing sugar and vanilla with the electric beater in the other small bowl.
- Add to the top of the pie and sprinkle with pecans.
- Serve immediately afterwards.
