Basil Pesto (Serves 2)

Ingredients:

  • 2 tsp salt
  • 140g Penne Pasta
  • 1 cup basil leaves
  • 2 cloves garlic
  • 5 tblsps. olive oil
  • 3 tblsps. pine nuts (extra to serve)
  • 20g parmesan cheese (extra to serve)

Utensils:

  • Food processor
  • Chopping board
  • Chef’s knife
  • Measuring cups
  • Measuring spoons
  • Measuring scales
  • Saucepan
  • Spatula
  • Wooden spoon
  • Small baking tray
  • Baking paper
  • Grater
  • Strainer

Method:

  1. Line a small baking tray with baking paper. Bring half a saucepan of salted water to the boil. Add the pasta to the boiling water once it begins to bubble.
  2. Peel garlic and grate parmesan. Place pine nuts on the tray and place in the oven on medium heat. Toast for 5-10mins or until golden.
  3.  Add the grated parmesan, garlic, toasted pine nuts, olive oil and basil to the food processor. Process all these ingredients together until they form a smooth paste.
  4. Strain the pasta once it is cooked then mix it into the pesto. Top with extra pine nuts and parmesan cheese.
