Pumpkin Soup

Hello All,

Soup is a great way to start a meal especially as it is getting colder. This recipe is the first of our monthly special. To check out any of out previous specials go to the Archive.

Utensils:

  • Large Saucepan
  • Chef knife
  • Cutting board
  • Hand Blender
  • Wooden spoon
  • Vegetable peeler

Ingredients:

  • 1 popper of vegetable stock
  • 1 pumpkin
  • 2 large potatoes
  • 1 large onions
  • 200mL cream

Method:

  1. Peel the pumpkin and dice, onion and potatoes.
  2. Add pumpkin, potatoes, onion, a stock to a large saucepan and cook on high until the vegetables are soft to touch.
  3. Using the hand blender blitz the vegetables until they form a paste like mixture. Mix through the cream.
  4. Serve while hot.
