Cauliflower and Bacon Soup

Welcome to our third installment of our soup edition. This super yummy soup is super easy and quick.

Utensils:

  • Cutting board
  • Chef’s knife
  • Measuring spoons
  • Measuring cups
  • Stick blender

Ingredients:

  • 1 tblsp olive oil
  • 250g short cut bacon
  • 3 garlic cloves
  • 1 large brown onion
  • 1 cauliflower
  • 2 potatoes
  • ½ cup thickened cream
  • 1 popper of vegetable stock
  • Pepper

Method:

  1. Dice onion, slice bacon, Potatoes and Cauliflower and Crush the garlic.
  2. Brown off onion, garlic and Bacon with the olive oil in a large saucepan. String often.
  3. Add cauliflower, potato and stock and bring to the boil on medium to high heat.
  4. Add pepper and reduce heat to low and simmer, stirring occasionally for about 20mins or until the vegetables soften.
  5. Blitz with stick blender until smooth then stir through the cream.
