Egg Yolk Lemon Curd

Hello Everyone,

This super easy lemon curd option is a great to put on pavlovas! Especially our special tropical pavlova that will becoming out next week!

Ingredients:

  • 4 egg yolks
  • ⅔ cup caster sugar
  • 60g unsalted butter
  • 2 tsp grated lemon zest
  • 1/3 cup lemon juice

Utensils:

  • Micro plane
  • Measuring cups
  • Measuring spoons
  • Scales
  • Sterilised jar
  • Butter knife

Method:

  1. Whisk egg yolks and sugar until well combined but not frothy.
  2. Tip into a saucepan and add butter, lemon zest and lemon juice.
  3. Bring to simmering point over a medium-high heat, stirring constantly for about five minutes.
  4. As soon as bubbles appear, remove from heat and continue stirring. Allow to cool.
  5. Transfer to a sterilised jar and seal.
